Jamaican Fusion Dinner for Ten: Fluffy Coconut Rice + Jerk Steak + Red Sauce (Gluten-Free)

After sharing one of our family’s favorite dinners, we received several requests for the recipes. This dinner is not only easy to make but also serves ten - a win-win! Below, I've listed the recipes in the order in which I start each dish. If you decide to try this dinner idea for your family, I'd love to hear about your experience!


Fluffy Coconut Rice:

Ingredients:

  • 3 cups jasmine, basmati, or long grain white rice

  • 1 cup coconut milk

  • 4 cups water (or coconut water for more intense coconut flavor)

  • 1/4 tsp sea salt

  • 2 Tbsp coconut oil

Instructions:

  1. Heat the coconut oil in a nonstick pot over medium-high heat.

  2. Add the dry uncooked rice to the pot and stir continuously until the rice changes color to a shiny white/light brown.

  3. Pour in the coconut milk, water (or coconut water), and salt. Bring to a full boil for 2 minutes.

  4. Cover the pot with a lid, reduce the heat to low, and simmer for 20 minutes.

  5. After 20 minutes, remove the pot from the heat and let it sit, covered, for an additional 10 minutes.

  6. Fluff the rice with a fork before serving.


Jamaican Jerk Stir-Fry:

Ingredients:

  • 2 lbs steak (sirloin or flank), cut into strips

  • 2 cups carrots, cut into strips

  • 1 large purple onion, sliced into rings

  • 2 stalks celery, cut into strips

  • 2 bell peppers (red, yellow, or green), sliced into wide squares or strips

  • 2-3 Tbsp Walkerswood Jamaican Jerk Seasoning

  • 2-3 Tbsp cooking oil (coconut oil or vegetable oil)

  • 2 sliced avocados

Instructions:

  1. Heat 1-2 tablespoons of cooking oil in a large skillet or wok over medium-high heat.

  2. Add the carrots to the skillet and stir-fry for 2-3 minutes until slightly softened.

  3. Next, add the purple onion and celery, and stir-fry for an additional 2 minutes.

  4. Add the bell peppers to the skillet and stir-fry for another 2-3 minutes until all the vegetables are tender-crisp. Remove the vegetables from the skillet and set aside.

  5. In the same skillet, add another tablespoon of oil if needed. Rub the steak strips with Jamaican Jerk Seasoning.

  6. Add the seasoned steak strips to the skillet and cook for 4-5 minutes on each side until cooked to your desired doneness.

  7. Once the steak is cooked, return the sautéed vegetables to the skillet and toss everything together until well combined.

  8. Serve over coconut rice, garnish with avocado slices.


Jamaican Red Sauce:

I found this recipe on TikTok, but changed a few ingredients such as swapping out the sugar with raw honey.

Ingredients:

  • 1 cup water

  • 1 cup ketchup

  • 1 tsp ground ginger

  • 2 Tbsp cornstarch

  • 1/2 cup honey

Instructions:

  1. In a bowl, whisk together the water, ketchup, ginger, cornstarch, and honey until well combined.

  2. Transfer the mixture to a saucepan and heat over medium heat.

  3. Bring the sauce to a boil, stirring constantly, until it thickens to your desired consistency.

  4. Once thickened, remove the sauce from the heat and allow it to cool slightly before serving.

Serve the Jamaican Jerk Stir-Fry over the Fluffy Coconut Rice, drizzled with the Jamaican Red Sauce for a flavorful and satisfying meal. Enjoy the fusion of Caribbean flavors in every bite!
