Enter ChatGPT, my trusty personal assistant and the source of culinary inspiration I never knew I needed. With the ingredients I had on hand, I asked ChatGPT to come up with a recipe, and it didn't disappoint. The result? Cheesy Salmon Cakes, gluten-free and absolutely mouthwatering!
The moment these salmon cakes hit my tongue, I knew I’d found a winner. The first bite was pure heaven. The melty ricotta filling inside each cake was the epitome of perfection. Recipe: Cheesy Salmon Cakes (Gluten Free)
1 cup gluten-free flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup (1/2 stick) butter, cold and cubed
1/4 cup milk (you can use dairy or non-dairy milk)
1 large egg
1 cup cooked salmon, flaked into small pieces
1/2 cup shredded cheese (cheddar, Swiss, or your favorite cheese)
1/2 teaspoon dried thyme
1/2 teaspoon dried parsley
1/4 teaspoon ground cumin
Ricotta cheese for filling
INSTRUCTIONS
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or spread coconut oil on it.
In a mixing bowl, combine the gluten-free flour, baking powder, baking soda, and salt.
Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.
Mix the egg and milk together. Pour the mixture into the dry ingredients slowly and stir until a wet dough forms.
Gently fold in the cooked salmon, shredded cheese, dried thyme, dried parsley, and ground cumin. Mix until the ingredients are evenly distributed in the dough.
Scoop the biscuits onto the pan. Press a tablespoon-sized hole in the middle of each biscuit and fill with ricotta. Sprinkle extra seasoning and sea salt on the biscuits.
