Our grocery order wasn’t going to get here until Friday, since I like to time a fresh grocery order to arrive right before everyone gets home from school before a weekend begins. It wasn’t like we didn’t have any food left in the house… I just wasn’t sure what I wanted to make for dinner with what I had. And nothing really sounded good.

I had some leftover salmon, gluten-free flour, ricotta cheese, pepperjack cheese, an egg, spinach (could make a salad? Nah… too many of those this week) and a few other random ingredients. Surely I could come up with something delicious, right?

Enter ChatGPT, my trusty personal assistant and the source of culinary inspiration I never knew I needed. With the ingredients I had on hand, I asked ChatGPT to come up with a recipe, and it didn't disappoint. The result? Cheesy Salmon Cakes, gluten-free and absolutely mouthwatering!

The moment these salmon cakes hit my tongue, I knew I’d found a winner. The first bite was pure heaven. The melty ricotta filling inside each cake was the epitome of perfection. The biscuits themselves struck the ideal balance—moist and flavorful, yet with a delightful crispness from the melted cheese around the edges. It was a mouthwatering sensation that left me wanting more. Emma ate nearly half a pan just moments later and asked me if I could please make these again!

Recipe: Cheesy Salmon Cakes (Gluten Free)

  • 1 cup gluten-free flour

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/4 cup (1/2 stick) butter, cold and cubed

  • 1/4 cup milk (you can use dairy or non-dairy milk)

  • 1 large egg

  • 1 cup cooked salmon, flaked into small pieces

  • 1/2 cup shredded cheese (cheddar, Swiss, or your favorite cheese)

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried parsley

  • 1/4 teaspoon ground cumin

  • Ricotta cheese for filling

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or spread coconut oil on it.

  2. In a mixing bowl, combine the gluten-free flour, baking powder, baking soda, and salt.

  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.

  4. Mix the egg and milk together. Pour the mixture into the dry ingredients slowly and stir until a wet dough forms.

  5. Gently fold in the cooked salmon, shredded cheese, dried thyme, dried parsley, and ground cumin. Mix until the ingredients are evenly distributed in the dough.

  6. Scoop the biscuits onto the pan. Press a tablespoon-sized hole in the middle of each biscuit and fill with ricotta. Sprinkle extra seasoning and sea salt on the biscuits.
